Mediterranean Black Bean Pasta

You know, sometimes you just need to have a nice Italian pasta meal. This special pasta dish has triple the protein and is very low in starch and sugar. 

I was mooching around Costco last week and found an amazing new pasta that is gluten free, vegan, certified organic and low in carbohydrates. Now, if you understand what pasta is made of, you will realize this is a semi impossibility but . . . let me present Mediterranean Black Bean Pasta Bolognaise-easy quick and so delicious

 

Ingredients

Sauce

 

1 onion , diced

2-3  cloves garlic, minced

1 pound prime lean minced beef (organic if possible)

400 g (18 oz ) tinned diced tomatoes

1 can tomato sauce

¼ cup red wine

1 chopped green pepper

1 can sliced mushrooms

1 zucchini, diced

!/4 c. Goat cheese feta and/or

¼ c. fresh Parmesan cheese

Fresh Basil to top

 

Pasta

Balck bean pasta for 2, 4 or 8 (see package directions) or other favourite Gluten free pasta mix

2 tbsp pesto sauce
