Live Well Spinach Salad

LiveWell Spinach Salad
This Spring why not treat yourself to this yummy, nutritious salad. The combination of natural sweetness combined with tart is what makes this salad so amazing. Serve it to your guests as a lunch dish or dinner salad. They will beg you for the recipe !
Each salad will give you 4-6 generous portions.
Maple Balsamic Dressing (enough for 3-4 salads-store in your fridge)
 ¾ c. Optomega or Extra Virgin Olive Oil
 1/3 c. Balsamic Vinegar
 ¼ c. Maple Syrup
 1 Tbsp Dijon Mustard
 8 Garlic gloves (yes, 8)
 1/8 tsp oregano
 ¼ tsp sea salt
 ½ tsp cracked pepper
Squeeze the garlic in a garlic press. Add all ingredients into a blender and blend till smooth. You will use about ¼ of the dressing per salad for 4-6 people.
Use certified Organic ingredients if possible
Spinach Salad
1 bag fresh baby spinach
1/6 of a purple onion, finely sliced
1-2 c. Sliced Strawberries or Sliced Avacado
¼ c. Dried cranberries
1/3 c. Pecans, Slivered Almonds or Walnuts
1/3 c. crumpled goats feta
Mix all ingredients and toss with Balsamic Maple Dressing. Enjoy! Store remaining dressing in fridge for next time. You will want it soon!
