    I made this delicious salad for a family birthday party yesterday to go with a Mexican casserole. This makes a very colourful & delicious salad to add a little zing to any meal. It would be a perfect side dish to fish tacos! It also makes a really easy lunch to take to work or school.

    A few of my readers tell me that your favourite recipes of mine are the International ones with aromatic spices. Here is one of my favourites that I have recently created. For those of you who are vegetarian like me, or Vegan you can leave out the chicken or replace with an equal amount of firm tofu.
